Paul's Provisions is a full service catering company bringing Chef Paul Madrid's Contemporary American Cuisine to the Centre County Region.


Chef Madrid has teamed up with Patrick Donaghy, former owner of Centre County Caterers, in order to bring a premier catering company to Happy Valley. Paul and Patrick bring 45 years of combined restaurant, catering, and convention service experience to Paul's Provisions and will utilize their many years of success to set a standard of cuisine and catering services in the area.


Located conveniently in State College, PA with a state of the art catering production kitchen, Paul's Provisions offers an extensive selection of catering services with customizable menus and market pricing.


Paul's Provisions is currently on the Penn State Preferred Caterers list and can be reached directly to personally tailor any event.

Patrick Donaghy

Director of Operations

A Pennsylvania State University graduate, Patrick started his training in the culinary arts in high school in Lexington, VA. After moving to State College, he continued to cook in several restaurants during his collegiate years. After graduating with a degree in Economics, Patrick made his way to San Francisco and was trained extensively in Front of the House management by Starwood Hotels. After training he became the Banquet Manager at The Westin St. Francis and the Director of Banquets at the W Hotel San Francisco.

Never losing his love of the business, Patrick made the decision to branch out on his own and bring his diverse culinary interests and style back to Happy Valley. Patrick opened All Seasons Catering and later Centre County Caterers. Patrick then teamed up with Chef Paul Madrid to bring a top tier catering company to the local area.

Patrick is involved with local charity and civic groups in State College and enjoys performing as a musician with his wife in the group Screwdriver Sally. When he's not managing events, playing with his children or renovating his home, you may find him out performing on a football weekend in Happy Valley.

Paul Madrid was exposed at an early age to the regional and ethnic cuisines from his family's many travels all over the world. Despite his family's many moves, however, Paul always returned to Southern California. It was here that his Mother's and Father's families had an early impact on his love of food.

While studying Visual Arts at the Pennsylvania State University, Paul realized his true passion resided in the Culinary Arts. Determined to follow his heart, he began working for a local chef who subsequently mentored him on his rise in the culinary field. Once he had gained knowledge of the fundamentals, Paul relocated to Washington, DC where his talent, determination, and drive led him to work at many area restaurants and subsequently joining an up and coming
restaurant group.

Paul opened Town Hall and Sixth Engine with his new partners and received many accolades for his contemporary cuisine. After his success in Washington, Paul decided to move to State College, PA, where he and his wife could raise their two sons in a family-oriented community. He has teamed up with a local caterer, Patrick Donaghy, to bring a top tier catering company to the local area: Paul's Provisions.
